Tajima's Wagyu cattle are raised in New South Wales, South Australia and Victoria. An exclusive Wagyu feeding operation feeds these Wagyu cattle 3 different specialised rations for a minimum of 350 days. The short loin is located behind the ribs. Compared to the ribeye, it is leaner and has less fat, which makes heartier steaks.

This steak is perfect for a variety of cooking methods.
