Japanese A5 Wagyu Sukiyaki 150g+/- Tray
Japanese A5 Wagyu has the highest rating of all Wagyu beef. In addition to scoring an A (72% or more) for ratio of meat-to-carcass weight, the Wagyu beef must also be rated 5/5 in the categories of Beef Marbling Score, which must be between 8 and 12; Beef Colour Standard, Beef Fat Standard, Firmness and Texture.
A5 Wagyu beef is sought after for sukiyaki, steamboat and other hot pots due to its tenderness, high quality, umami flavour, and even appearance (layers of snow-white marbling fill the pinkish meat). Sukiyaki slices are slightly thicker than shabu-shabu slices, and can be pan-fried first to brown them before dipping them in rich broth.
