The topside and top round are located in the hindquarter of the Wagyu cow. It is known as uchi momo in Japanese. The topside/top round is a relatively lean cut, so we often prepare yakiniku slices with a small strip of fat at the top to offer some juiciness together with the cut’s hearty eating experience. The Wagyu beef from this cut is known for its rich, beefy taste and aroma, with a subtle sweetness that lingers on the palate.
