This Christmas, our butchers are ready to prepare Wagyu beef for your festive roasts. Each cut is carefully selected, sliced, and tied with kitchen twine. The string helps to maintain the wagyu’s shape while roasting in the oven, and also makes a more attractive presentation at the table.

The topside, also known as the top round cut, is located near the long, inner thigh muscle. The topside is the leanest, most fat-free part of the cow. It offers a heartier eating experience, and topside roasts can be carved into beautifully uniform slices.
