The hanging tender, also known as the hanger steak or “butcher’s steak,” is a prized cut known for its deep, rich beef flavour and tenderness. This cut offers an excellent balance of juiciness and robust texture. It has a looser grain and more open texture than typical steak cuts like striploin or ribeye, which gives it a pleasantly chewy, tender bite. The hanging tender tastes similar to the skirt or flank, but with a more tender texture. Because there’s only one hanging tender per animal, it’s a rarer cut, often favoured by chefs for its flavour and value.
