The OP Rib, or Oven-Prepared Rib, is a premium bone-in cut taken from the rib primal, specifically ribs 6 to 12. It includes the well-known ribeye but retains the rib bone, giving it a dramatic, tomahawk-like presentation. Compared to a standard ribeye (which is boneless), the OP Rib has more flavour thanks to the bone and surrounding fat cap, making it ideal for slow roasting or grilling.
