The OP Rib, or Oven-Prepared Rib, is a premium bone-in cut taken from the rib primal, specifically ribs 6 to 12. It includes the well-known ribeye but retains the rib bone, giving it a dramatic, tomahawk-like presentation. Compared to a standard ribeye (which is boneless), the OP Rib has more flavour thanks to the bone and surrounding fat cap, making it ideal for slow roasting or grilling. It’s meatier and more substantial than a tomahawk, with less bone length, and delivers a richer eating experience due to its marbling and size.
