Polenta is produced by coarsely cracking maize grain. It is slow-cooked in liquid until the grains swell and the starches are released. Polenta is a rich source of both fiber and protein, as well as complex carbohydrates. Furthermore, it is gluten-free, low in fat and low in calories. Polenta is traditionally used in Italian cooking. Serve polenta as a hot porridge.
